Many gluten-free people tell me how much they miss eating cookies and I always tell them that they do not have to give them up.
Instead they should just learn some that are made without wheat and glutenous grains.
These are actually very easy to make and typically turn out very deliciously.
You do not even have to make them from scratch you can just purchase some that are already prepared or use one of the GF mixes that are available.
My first recipe is a mix from Cherrybrook Kitchen.
· 1 box of Cherrybrook Kitchen's Sugar cookie mix
· 1/2 cup of melted butter
· 1/4 cup of milk or milk substitute
· 2 1/2 tsp of vanilla extract
Instructions: Heat oven to 325F. Mix butter, milk, vanilla, and mix. Roll the dough into 1 inch balls and place them onto a cooking tray about 2 inches apart. Bake 12-14 minutes or until lightly golden brown. Cool 1 minute before removing from oven.

*This is an excellent recipe but it is fairly high in sugar, so if you want a low sugar dessert then this is probably not the one for you.
Gluten-Free Chocolate Chip Recipes
· 3/4 cup of turbinado sugar
· 1/2 cup butter
· 1 tsp vanilla extract
· 1/4 cup milk
· 2 cups GF Biscuit Mix
· 1/2 cup Chocolate Chips
Instructions: Blend together the sugar and butter. Add the vanilla and milk and mix until fully incorporated. Add the biscuit mix and blend until just combined. Add the chocolate chips and mix until they are dispersed. Place by rounded tablespoon on greased baking sheet. Press on the tops of the dough slightly to flatten them. Bake at 375°F for 15 minutes.
Yields - 36.

Second Chocolate Chip Recipe
· 1 box of GF Pantry's chocolate chip mix
· 5 tbsp softened, unsalted butter
· 2 eggs
· 2 tsp gluten-free vanilla
Instructions: Preheat oven to 325 degrees. Line 2 cooking trays with parchment paper. Beat melted butter until fluffy. Add mix and blend well. Then add eggs and vanilla. Roll dough into 1-inch balls and set 2 inches apart on cooking trays. Bake 12-14 minutes or until golden. Remove and cool.
